Coquille ceviche in little gem with avocado whip
– 4 fresh coquilles (scallops), cleaned (you can buy them like this at the fish store)
HOW TO MAKE
Prep the coquilles: Dice the scallops into tiny cubes. Mix with lime and lemon juice, red chili, chili flakes, mango and honey. Let it marinate in the fridge for at least 10–15 minutes.
Whip it: Blend the avocado with a splash of lime juice, a spoon of Greek yoghurt (optional), salt and pepper until smooth and creamy.
Assemble: Spoon a dollop of avocado whip into each Little Gem leaf. Add a spoonful of ceviche on top.
Finish with flair: Garnish with fresh coriander and serve chilled.
